RECIPE SUGGESTION
BLACK BEAN CAPELLINI WITH AVOCADO SAUCE
- 8 basil stalks
- 6 parsley stalks
- 2 garlic cloves
- 2 avocados
- 1 lemon (untreated)
- 1 tsp chilli flakes
- 1 tsp harissa (optional)
- 50 g parmesan
- 2 tbsp olive oil
- Salt, pepper & pinch of sugar (SPS)
- 250 g black bean capellini
METHOD
Chop the basil, parsley and garlic and purée in a bowl with the avocado flesh and olive oil. Wash the lemon in hot water, grate 1 tsp of zest and mix into the purée with 2 tbsp of lemon juice, the chilli flakes, 25 g of parmesan and 1 tsp of harissa. Season with SPS.
